America—A Nation of One People From Many Countries,” by Emma Bourne, published in 1940 by the Council Against Intolerance in America.

At Atlas Obscura, Lauren Young writes about a powerful 1940 map showing America as a nation of immigrants.

“In the years leading up to the Second World War,” says Young, “isolationist sentiment coursed pretty strongly throughout the United States. Some Americans feared that immigrants were a threat to the country. …

“ ‘With the exception of the Indian, all Americans or their forefathers came here from other countries,’ the illustrator Emma Bourne inscribed on the map. The Council Against Intolerance commissioned Bourne’s work in an effort to remind Americans that the U.S. had always defined itself as a country of varied national origins and religious backgrounds.

“Bourne illustrates America’s unique ethnic and religious diversity by erasing state borderlines and showing the nation as one unit. Long red ribbons weave through the landscape to show clusters of immigrant groups and where they settled, from Japanese in the West to Italians in the East. At the bottom left is an inset scroll listing famous Americans in literature, science, industry, and the arts alongside their ethnic backgrounds, including George Gershwin and Albert Einstein, who became a U.S. citizen the year the map was published. …

“Bourne also emphasizes the range of religions present during this era, along with staple industries in each state, including a giant potato in Idaho, a huge fish in Washington, and large lobster in Maine. Detailed figures of people at work are meant to show how immigrants are active in creating a prosperous America.” Read more here.

A friend of mine has a new blog on economic education.  He’s a very good writer with a great sense of history and how history repeats itself. Here he notes that there have always been vested interests in America giving immigrants a hard time. Those immigrants become integral to the fabric of American life, but sometimes their descendants forget the struggle and turn against newer immigrants. We need to remind ourselves of how well things have worked out when newcomers have gotten education, started businesses, hired people, run for office, invested in communities.

Personally, I love to think of America as built by immigrants. Besides, Erik is from Sweden and my daughter-in-law’s parents came from Egypt.

On the Tuesday after Memorial Day I ran into a woman I know who works in another department. She grew up in New York City, where her father worked at the United Nations. Her family is from Pakistan. After inquiring about her weekend, I learned that she had cooked for 80 by herself, serving everyone in her backyard! The meal sounded amazing, so I asked her to e-mail the menu to me.

Cow’s feet/trotters are considered a delicacy in Pakistan.  Mine took 7 hours to make of which 6 hours were cooked on the regular stove and one hour was in the pressure cooker.  Ideally, you should be able to cook them for about 75 minutes in the pressure cooker.  However, since I was making such a large quantity I decided to cook them on the stove.  After six hours, I gave up and cooked a few batches separately in the pressure cooker 🙂

So I got to thinking, I wonder how many different kinds of banquets prepared by people from different countries of origin are being cooked for backyard parties on Memorial Day. Or July 4. What a recipe book that would make!

Do you publish cookbooks? You may take the idea and run with it. This book will surely be too heavy to carry, given all the different groups that make up America. You may have to make it an online e-book.

Cooking for 10 is about all I want to ever try managing! … maybe 15 or 20. 80? 80?? Yowza. And I liked your earlier entry, on the group doing mild ecumenicism for Jews, Christians, and Muslims. I hope you can interest your religious ed director in hosting a lecture by the organizing woman.
